Teflon non-stick pans do no need oil for cooking although a little drizzle helps brown the food.
I use extra-virgin olive oil for all of my cooking but I avoid using it to fry my food.
Low calorie olive spray is ideal for non-stick frying pans.
I heard coconut oil was a healthy alternative when an oil is required for cooking. I will try this out the next time I decide to have a stir fry or scrambled egg.
Update [06/04/12]: I tried a little coconut oil when I was re-heating some basmati rice. Seemed to give it a little extra flaovur and has healthy MCT fats. The coconut oil in the tub was solid and only a small amount is required. Let it melt in the pan until it's clear before cooking.
